JAMAICAN JERK CHICKEN BOB-SLIDERS

Feel the rhythm, feel the rhyme, get on up it’s slider time! If you like the heat of Jamaican Jerk chicken then these sliders are exactly what you need. Start with some nice fresh, soft slider buns and build from there. These sliders are packed with flavor and require no additional toppings. Yeah mon!

INGREDIENTS

4 chicken breasts
1 cup Jerk marinade (Grace Jamaican Jerk Sauce is great)
Slider buns

FOR THE MANGO CHUTNEY

1/2 red onion diced
1 jalapeno pepper diced
1 tablespoon cilantro diced
1 large mango cut into small cubes
1 tablespoon scotch bonnet sauce
1 tablespoon salt
Juice of 1 lime

DIRECTIONS

  1. Thoroughly coat the chicken with the jerk marinade, let stand for up to 2 hours in the refrigerator. Combine the mango chutney ingredients together in a bowl and stir thoroughly, let stand for up to 1 hour. Preheat the grill on MEDIUM-HIGH, season the grilling surface then grill the chicken breasts directly for ideal sear marks for up 15 minutes on one side and 15 minutes on the other, baste with the remaining marinade early to coat it onto the exterior thoroughly, cook until the internal temperature has reached 170°F (77°C). Remove chicken breasts then shred, we recommend using the Broil King® meat claws #64070. Mix in some fresh jerk sauce. Top the buns with shredded Jerk chicken and mango chutney. Serve and enjoy mon!
